First, start your basmati rice.  (Usually 1 1/2 cups water bring to boil, add rice, simmer for 15 mins.)  Once you're at the simmer stage, add salt to taste, about 1/4 tsp. Chapotle chilli pwd, a dash of cumin and a dash of black pepper.

Next, heat a bit of olive oil in a {seasoned cast iron} pan, on med-low.  Once hot, add your diced potatoes.  Brown on one side, add spices: garlic powder, onion powder, cumin, salt, black pepper, and a touch of chilli powder and red pepper.  Continue to cook until browned, flipping occasionally.
Set your potatoes aside.  Add a touch more olive oil, then add your diced onions and chives.  Lightly cook... 1-2 minutes.
Next, add your chopped broccoli and zucchini.   Cook for 2-4 more mins...
Spice it up!  Add Garlic powder, onion powder, salt, pepper, cumin, all purpose seasoning...  We use Simply Organic brand.
Next, add about a can and 1/2 worth of beans.  I used my own precooked beans; a mixture of black, pinto and white beans.  Continue to cook a few more minutes, stirring occasionally.
Set it all out on a serving dish aside your rice and potatoes, garnish with avacado.
Wipe your pan clean, turn down the heat to just above simmer and heat up your white corn tortillas.
Serve with avacado...
Or also add some mild fresh salsa!  Ta-dow!  Kerpow!  Feel that kickin' traditional flavor all up in yo' mouth!
Enjoy!
